What is Label and How to use it

Label is what some would also call category
Eg you have a blog about food
Then you label for example posts about appetizer with the label (category) Appetizer
Posts about main courses with label Main course
Posts about desserts with the label Desserts
Posts about vegetarian food with the label Vegetarian
etc etc
Then you go to Layout and add a Label gadget and put it in the sidebar or
